For decades, you were told eggs were dangerous.
It’s like saying popsicles cause sunburn.
The origin? A theory from Ancel Keys in the 1960s: dietary cholesterol raises blood cholesterol, which causes heart disease.
In 1952, Keys presented the diet-heart hypothesis that linked heart disease to fat intake.
His hypothesis is why we fear eating fat to this day.
Since his initial “findings”, avoiding fat has become synonymous with a healthy diet.
It became gospel. The food industry followed. Doctors echoed it.
That theory was never conclusively proven.
In fact, the famous “Seven Countries Study” that helped solidify this belief cherry-picked data.
Countries like France, Germany, and Switzerland, where people ate lots of eggs and fatty foods but had low heart disease rates, were left out.
The Inuit tribe to the north live on Whale Blubber, Seal and Fish. With almost zero heart issues. Also left out.
In science, that’s called confirmation bias. In public health, it shaped policy for 50 years.
But the data couldn’t be ignored forever.
In 2015, the USDA quietly removed its cap on dietary cholesterol.
Dozens of studies have since shown that for the majority of people, dietary cholesterol has little to no impact on blood cholesterol levels, because your liver produces most of it independently.
Harvard Health and the Mayo Clinic now acknowledge this shift in understanding.
So, what actually happens when you eat 3-4 eggs a day?
High-quality protein for muscle, energy, and satiety
Choline to boost memory and brain health
Lutein + zeaxanthin to protect your eyes
Vitamins A, D, E, K2, and B12 all in the yolk
Good fats + omega-3s
The catch? You have to eat the whole egg.
The yolk is where 90% of the nutrients are.
Still tossing out the yolks?
That’s like buying a Ferrari and leaving the engine behind.
Also: not all eggs are equal.
Choose pasture-raised for better omega-3 profiles.
Go organic to avoid toxins in the feed supply.
Eggs were never the problem. Bad science was.
